First off…holy sh*tballs – it’s been way over a month since our last blog post! Sorry guys! Don’t want to sound like I am making excuses here, but Mikey and I have been so busy with events and classes, we have had zero time to get our cameras out and shoot.But it’s not all bad news people – over the last month, we put some new recipes up to the test, and now lots of good stuff will be coming your way.

Ok, enough talk, it’s Tiki time! And speaking of tiki, this orgeat recipe is one we couldn’t wait any longer to share. A staple in the tiki cocktail culture, the orgeat (pronounced or-jah) is typically made with almonds, but as per usual we wanted to shake things up and use Macadamia nut instead.

This crazy nut is notorious for its health benefits and over the last few months, I have personally developed quite the taste for it (mainly through trying various diets that calls for the super nut) .So naturally, it was time to incorporate my new flavor obsession into some cocktails – and tiki drinks came to mind first. But making the macadamia nut orgeat turned out to be way trickier job than I originally anticipated.

Even though our first few batches were acceptable (flavorwise), the high level of oils in Macadamia nut caused the final product to separate quite drastically. So, I spent quite some time researching how to fix this head-scratcher. Through my research, I discovered xanthan gum and gum arabica – food stabilizers that were the perfect solutions to our separation problem (thank you Reddit cocktail community).

After a few more trials and errors, we finally made the perfect Macadamia nut orgeat we have been craving.

Whether you are a professional bartender or you simply enjoy making cocktails at home, this orgeat would be a great addition to any bar, as it is very versatile. While we made the orgeat with the idea to use strictly in tiki concoctions, this super nut gem tastes fantastic in coffee, dessert cocktails, and espresso martinis. Or simply pour some over vanilla ice cream and your Monday nights suddenly won’t be looking so blue.

Toasted Macadamia Nut Orgeat

Ingredients

  • 1 cup Macadamia Nut
  • 1 cup Sugar
  • 2 cups Water
  • .5 oz Frangelico
  • 1/3 teaspoon Gum Arabic
  • 1/3 teaspoon Xanthan Gum
  • 2 dashes Rose Water

Instructions

  1. Roast the Macadamia Nut in a saucepan until it gets brown

  2. In a blender, add the roasted nuts and 2 cups of water and blend on high for 2 minutes (it will look like a brown mash)

  3.  Pour the mash into a nut-milk bag over a bowl, and squeeze as much liquid as possible (if you don't have a nut milk bag, strain through a fine-mesh sieve covered with a few layers of cheesecloth)

  4. In a saucepan combine however much liquid you were able to squeeze out of the mash and add the same amount of sugar. Turn the heat and stir until the sugar is dissolved (bringing to boil is not necessary). Remove from heat and let it cool

  5. Rinse the blender. Add the sweetened liquid, Frangelico, Gum Arabic, Xanthan Gum and the Rose Water and blend on high for 1 minute

  6. Transfer to a clear container or bottle and refrigerate. (good for up to 3 weeks)
