™️ Some of our favorite moments behind the bar hap ™️ Some of our favorite moments behind the bar happen when guests stop watching and start taking part. When a cocktail gives people something to do and something to share, they’re not just at the event anymore. They’re in it.

Turning the ballroom into a stadium for a brief moment. That’s the energy we love creating
™️ We’ve always felt bottle service is one of the ™️ We’ve always felt bottle service is one of the lowest-effort ways to show VIP guests they’re appreciated. A bottle and a few mixers on the table, and they’re left to do the rest. We believe the people who give the most to an event should feel it the most. That shouldn’t mean more alcohol. It should mean someone is looking after them.

So when the @searchfound trusted us with their VIP guests, there was only one way we wanted to do it. Every booth got its own bartender looking after 12 to 13 guests. We made clarified cocktails to order, over custom ice stamped with the Foundation’s logo. Nobody had to pour their own drink or wave anyone down. Someone was there for them all night.

These guests showed up for something they believe in. We wanted the night to feel like a thank you.

Behind the bar @mariatwostraps. Thank you @searchfoundand and @katepatay for trusting us with it.
™ The vapor is the part people photograph. The col ™ The vapor is the part people photograph. The cold is the part that matters.

Twenty seconds of liquid nitrogen and the coupe is already at temperature — so the drink lands cold and stays that way through the first fifty guests hitting the bar at once.

Hauling a nitrogen dewar to a vineyard is not a small decision. It’s a lot of effort for something no guest will ever name.

But the drink is the last thing in a long chain. Ice, glass, temperature, timing, what the bar looks like before anyone gets there. Get those right and the cocktail mostly takes care of itself.

So the effort goes into the parts nobody sees. That tends to be where the difference lives.

™ Somebody smells this before they taste it, and t ™ Somebody smells this before they taste it, and that’s the part they’ll tell you about later.

A helium limoncello air where the twist would normally go. A twist gives you three seconds of lemon, and then it’s gone. This one stays! Sits over the glass the whole time, so every sip arrives already smelling like the Amalfi Coast before it hits your mouth.

Filled with helium, which means it spends the entire drink quietly trying to leave.

It doesn’t get to.

™ Ninety degrees, no shade, and this still tastes ™ Ninety degrees, no shade, and this still tastes like the first sip forty minutes in.

The coconut foam is doing that. It slows everything down, keeping the drink from going thin and sweet the way a poolside cocktail usually does by the time someone gets pulled into a conversation and forgets they’re holding it.

Which is what actually happens at these things. Nobody drinks a cocktail in one sitting. They set it down, they get found, they come back to it.

The drink should still be good when they do.

™️ There are a lot of ways to measure a company. R ™️ There are a lot of ways to measure a company. Revenue. Events booked. Square footage of warehouse you’re paying too much for.

The one that actually means something is how many people it takes to do the work now, and whether the work still looks the way it did when four of us were doing all of it.

Different faces. Same bar. #laevent #hospitality #bringingyourbartolife

™️ “3/4 of the guests will be underage and won’t b ™️ “3/4 of the guests will be underage and won’t be drinking, but we still need something amazing.”

That was the brief. We know what that brief is quietly bracing for. The sigh. Followed by the lemonade batch. Followed by the checked-out bartender.

But here’s the thing: anticipation doesn’t care how old you are. The wait, the reveal, the moment where the crowd leans in. We build that for adults every weekend. So we built it here too, exactly the same way.

Sometimes putting a smile on a 14-year-old’s face, making them believe magic still exists, is more important than the drink ever was.

™️ A welcome drink is the first thing a guest touc ™️ A welcome drink is the first thing a guest touches. Before the food, before the toast, before they’ve figured out what kind of night they’re in for. Most people treat it as a logistics problem, get a glass in every hand.

We treat it as the first sentence of the evening.
So we don’t hand people a glass of something familiar. This one was a single spherified bite, pea flower tea, clarified cucumber-lime, fennel, sealed inside a thin membrane that bursts the moment it hits your mouth.

The first thing that happens to a guest is surprise. They look at the person next to them. They start talking.
That’s the actual job. Not the drink. The drink is the excuse.

The job is turning a room of strangers into a room that’s already talking before anyone says a word.

We design for how guests feel, not just what they drink.

™️ One bite. It bursts in your mouth. That was the ™️ One bite. It bursts in your mouth. That was the welcome.

@californiaweddingday Best of 2026 put the whole industry in one room, and we got to open the night alongside @24carrotscatering at their new Linden Club. Two spherified cocktails, a ruby tequila-hibiscus and a purple pea flower mocktail, each one a single bite that breaks the second it hits your mouth.

Served in the little gold coupes, 24 Carrots found for them, which beat anything we’d have reached for ourselves.

When a partner is this dialed in, the work just gets better.
