HOMEMADE PISTACHIO CORDIAL

A healty pistachio liqueur 

Ingredients

  • 24 oz Roasted and Shelled Pistachios
  • 8 oz Clover Honey
  • 1 cup White Sugar
  • 2 cups Water
  • 1 liter Everclear

Instructions

  1. Start by infusing 24oz of pistachios in one liter of Everlcear: Minimum of 24 hours

  2. Pour infusion (including whole pistachio’s) into a saucepan, and bring to a boil over medium heat- until a foam starts forming. Boiling any longer will begin to evaporate the alcohol - decreasing amount of liquid left

  3. Stir in 1 Cup of sugar, 8oz of clover honey, and 2 Cups of water

  4. Turn heat high, stirring frequently to keep honey and sugar from sticking to pan

  5. Bring back to a boil, then decrease heat to medium

  6. Simmer for 8-12 minutes. The longer you keep the mixture on the heat, the denser it becomes

  7. Take off the stove and let the mixture cool down

TWO WAYS TO FINISH CORDIAL

BLENDER METHOD
  1. Pour mixture (with whole pistachio’s) into the blender
  2. Blend well until you have smooth liquid
  3. Strain through cheese cloth and bottle in jars
FRUIT JUICER METHOD
  1. Run the mixture (with whole pistachio’s) through fruit juicer - as if you were juicing any regular fruit.
  2. To remove leftover solids: Strain mixture through cheesecloth and bottle in jars
