Amaro Guinness Float


  • 2 oz Bourbon
  • 1 oz Guinness Draught
  • 0.75 oz Amaro Ramazzotti
  • 0.25 oz Simple Syrup
  • 2 dashes Orange Bitters (we used Ragan's)
  • Vanilla Ice Cream (we used Tillamook)
  • Dark Chocolate (for garnish)


  1. Take the ice cream out of the freezer and let it sit for 5-10 minutes to soften

  2. Add the bourbon, Ramazzotti, simple syrup and bitters in a mixing glass, add ice and stir for 10 seconds

  3. Strain the chilled mixture into a serving glass and add an ounce of Guinness Draught

  4. Carefully float a few spoons of slightly melted vanilla ice cream

  5. Using a grater, shave dark chocolate on top
