Cut cucumber into 1-inch cubes
Add 5-6 cucumber cubes in a cocktail shaker and muddle well
Add the infused gin, agave syrup, fresh lime juice, and ice
Shake vigorously for about 10-15 seconds and fine strain over ice in a tall glass
Using a blowtorch, caramelize a ginger candy over the cocktail and stir the browned candy into the drink to release the ginger flavor.
Garnish with thyme sprig (using the blowtorch again, you can toast the thyme for a smoke effect)
